Chocolate lamb with plum salsa

Schoggi-Lämmli uf Zwätschge Salsa

ingredients for 4 persons

Chocolate lambs

  • 500g saddle of lamb fillets
  • 50g Idilio chocolate (the spicy Idilio No3, Selección Cata Ocumare is best)
  • 1 tablespoon of sugar
  • 1 chili pepper chopped
  • 1 teaspoon rosemary chopped
  • 2 tbsp balsamic vinegar
  • 1 tbsp good Italian olive oil
  • Pepper salt

Chilly salsa

  • 300g plums (or plums)
  • 1 shallot chopped
  • 1 tsp cardamom powder
  • ½ tsp ground aromatic pepper (e.g. Tasmanian pepper)
  • 1 chili pepper chopped
  • 2 tbsp liquid honey
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Juice and grated zest of an untreated lime
  • Season with salt


Chocolate lambs

  • Melt Idilio chocolate in a water bath
  • Add sugar and oil as well as chopped rosemary and chili to the chocolate.
  • Brush the saddle of lamb with the marinade and let it sit for a few minutes
  • Fry the lamb on the grill (or grill pan) for 2-3 minutes on each side and season with salt/pepper. The meat should still be pink.

Chilly salsa

  • Cut fruit into small pieces
  • Mix with all other ingredients.
  • Season with salt
